6 pounds boneless skinless chicken, cut in 1 inch cubes

Marinade
1 quart of buttermilk
1/2 cup of lemon juice
8 teaspoons ground cumin
8 teaspoons ground red pepper
8 teaspoons black pepper
4 teaspoon cinnamon
4 teaspoon salt
1 teaspoon ginger powder

Sauce
2 oz unsalted butter
1/4 cup garlic cloves, minced
4 jalapeno's minced (remove the seeds for a milder version) Use serrano for a spicier version
8 teaspoons ground coriander
4 teaspoon ground cumin
4 teaspoon paprika
4 teaspoon garam masala (buy in Indian market)
2 teaspoon salt
32oz of tomato sauce (for Keto use no sugar added" sauce)
1 quart whipping cream
1/2 cup chopped fresh cilantro

Clean and marinate your chicken. You can leave it whole or dice it to cook later. Leave in the marinade for 3 hrs to overnight. Grill the chicken and dice. Set aside to prepare the sauce.

Melt the butter, add the jalapenos and garlic. Cook till the jalapenos for a few minutes. Add the seasonings and cook for a few minutes longer. Add the tomato sauce and mix well. Turn the heat to a medium and let this cook for about 15 minutes. Finally add the cream and cook for an additional 5 minutes. Your sauce should have a nice thick consistency and it is ready to serve.

Serve alongside of rice with your grilled chicken. To make this a freezer meal simple portion up your chicken and sauce in zip lock bags of Vacuum Sealer bags. Try to remove as much air as possible. Freeze.

To reheat all you need to do is either boil your bag or let your dish thaw and reheat on the stove top.
