Learn how to cook lemon chocolate ganache for pistachio dacquoise sponge cake
Ingredients (for 2 cakes 10cm):
Lemon Chocolate Cream:
Lemon juice - 150 ml
Sugar – 30 g
Egg yolks – 3 pcs
Butter – 30 g
White chocolate – 80 g
Double cream 33-35% – 50 ml
Pistachio Dacquoise:
Almond flour -100 g
Powdered sugar -120 g
Egg whites – 140 g
Pistachio flour (finely chopped pistachios) – 25 g
Pistachio paste – 30 g
Sugar – 50 g
Flour – 20 g
Chopped pistachios – 20 g
Fresh Blackberry
Preparation:
Lemon Chocolate Cream
Squeeze lemon juice. Fold juice, butter, egg yolks and sugar mixture in the pan. Heat the mixture until thickening. Add the chocolate and hot double cream. Mix until a smooth mass using a blender. Leave in fridge for a night.
Pistachio Dacquoise
Firstly, grind the pistachios with a small part of the powdered sugar in a coffee grinder or food processor, if you don’t have pistachio flour.
Mix almond flour, pistachio flour and powdered sugar.
Preheat oven to 160 degrees.
Whisk the egg whites slowly until soft peaks form. Beat the whites until stiff peaks, adding the sugar gradually.
Mix of the whites with pistachio paste in a separate dish. Pistachio paste (or pistachio praline) can be bought at the store for confectioners. Pure pistachio pastes (like in video) is sold in ordinary grocery shops like peanut butter. If pure paste is very thick, add honey or sugar syrup a little to make the process of incorporating easier. It is also possible to add a drop of green dye.
Mix the beaten egg whites with the dry ingredients. Then incorporate pistachio paste with protein.
Pour mixture in rectangular shape (to cut circles after baking), or use steel rings for cakes. Sprinkle with chopped pistachios and powdered sugar.
Let it stay for 3 min and bake for 25 minutes. Let it cool completely.
Assembly
Pour cream on biscuit circle. Garnish with berries. Add the cream and put on top of another circle of sponge cake. Garnish with chopped pistachios and blackberries.
