Koh-E-Noor Chicken & Indonesian Nasi Goreng

In this exciting episode of Masala Mornings, Chef Shireen Anwar presents a regal Koh-E-Noor Chicken, perfectly complemented by the vibrant and savory Indonesian Nasi Goreng. Recipe 1: Koh-E-Noor Chicken
Ingredients
Boneless chicken cubes: ½ kg
Salt: 1 tsp
Chili powder: 2 tsp
Turmeric: ½ tsp
Chopperized tomatoes: 3
Allspice: 1 tsp
Karahi masala: 1 tbsp
Ginger (crushed): 1 tsp
Garlic (crushed): 1 tsp
Coriander leaves (chopped): 4 tbsp
Green chilies (chopped): 3
Method
Heat oil in a wok. Add crushed ginger and garlic; sauté until fragrant.
Add chicken cubes and fry until lightly browned.
Mix in chopperized tomatoes and all the seasonings (salt, chili powder, turmeric, allspice, and karahi masala).
Cook until the oil separates and floats to the top.
Garnish with chopped coriander leaves and green chilies.
Serve hot with naan or paratha.
Recipe 2: Indonesian Nasi Goreng
Ingredients
Boiled rice: ½ kg
Chicken breast (boneless, cut into small pieces): 1
Prawns (deveined): 15-20
Mushrooms (sliced): 8
Oil: ¼ cup
Spring onions (chopped): 1 cup
Sweet corn: ½ cup
Soy sauce: 2 tbsp
Curry powder: 1 tsp
Coriander leaves (chopped): 4 tbsp
Ketchup: 2 tbsp
Sriracha sauce: 2 tbsp
Crushed black pepper: ½ tsp
Brown sugar: 1 tbsp
Capsicum (finely chopped): ½
Red bell pepper (finely chopped): ½
Fried egg (for topping): 1
Method
Heat oil in a wok and sauté garlic paste until aromatic.
Add chicken and prawns, season with salt and curry powder, and cook until done.
Stir in all dry seasonings (crushed black pepper, brown sugar) and sauces (soy sauce, ketchup, sriracha).
Add boiled rice, sweet corn, capsicum, red bell pepper, and spring onions. Toss well until evenly mixed.
Finish with chopped coriander leaves.
Transfer to a serving dish, garnish with a fried egg, and serve hot.
