📌 RECIPE CARD
Safed Mash Dal Tarka
Ingredients:
• White lentils – 1/2 kg
• Small green chilies – 10
• Turmeric powder – 1 teaspoon
• Salt – 1 teaspoon
• Onion – 1
For Tarka (Tempering):
• Oil – 1 cup
• Fresh coriander – 1 bunch
• Cumin seeds – 1 teaspoon
• Onion – 1
• Finely chopped green chilies – 2 tablespoons
• Finely chopped ginger – as required
Method:
Soak the white lentils for 30 minutes. Add 4 glasses of water and place it on the stove to cook. Add the small green chilies, salt, turmeric, and onion, and cook on low heat until the dal becomes soft.
Once the lentils are fully cooked, remove it from the heat and set aside. For the tempering, heat oil in a pan and fry the onion and ginger until lightly golden. Then add cumin seeds, fresh coriander, and green chilies.
Transfer the cooked white lentils to a serving dish, pour the prepared tempering over it, and serve hot.



Smoked Keema Karahi
Ingredients:
• Beef mince (hand-chopped) – 1/2 kg
• Onion – 1
• Tomatoes – 1/2 kg
• Papaya paste – 2 tablespoons
• Yogurt – 1 cup
• Red chili powder – 2 teaspoons
• Turmeric powder – 1 teaspoon
• Whole coriander seeds – 1 teaspoon
• Cumin seeds – 2 teaspoons
• Crushed coriander seeds – 2 teaspoons
• Finely chopped ginger – 2 tablespoons
• Ginger-garlic paste – 1 tablespoon
• Green chilies – 6
• Fresh coriander – 1/2 bunch
• Charcoal – 1 piece
• Oil – 1/2 cup
• Salt – to taste
Method:
First, marinate the minced beef with yogurt, ginger-garlic paste, papaya paste, red chili powder, and salt. Set aside.
Heat oil in a karahi and brown the onion. Add the tomatoes and remaining spices, cover, and cook until the tomatoes soften. Then uncover and sauté on high heat until the oil separates.
Add the marinated mince and cook on high heat until done and the oil rises to the surface. Add the finely chopped ginger, green chilies, and fresh coriander. Finally, give it a charcoal smoke.
