Chicken Bukhari rice | Bukhari rice recipe
Chicken Bukhari rice is a delicious and aromatic dish popular in Middle Eastern and South Asian cuisines. It features fragrant basmati rice cooked with marinated chicken and a blend of spices, often garnished with fried onions, raisins, and nuts. Here’s a simple recipe to prepare Chicken Bukhari rice:
Ingredients:
1 whole chicken, cut into 4 pieces, skin on
1/2 cup Vegetable oil.
2 carrots, cut into a julienne
1 tablespoon Garlic finely chopped.
1/4 cup of raisins
1 onion, sliced
1 &1/2 tablespoon tomato paste
2 large tomatoes pureed.
3 cups basmati rice (long grain), washed and drained
4 cups of hot water
4-5 green chili peppers
1&1/2 tsp cumin powder
Salt and pepper, to taste

Bay leaves 2, Cinnamon stick-2 small pieces, Cloves-4-5
Optional
A pinch of turmeric for giving a nice colour for rice.
Dried lemon.
Method:
Heat a pan and Add oil .
Fry carrots for about 3-5 minutes , then add raisins, fry for 2-3 minutes.– remove, drain and set aside.
Add sliced onions and fry until golden
Add garlic, saute for 1-2 minutes.
Add whole spices and tomato paste, salt.
Add the chicken, fry for 3-4 minutes until slightly golden
Pour pureed tomatoes
Leave to simmer and reduce for 10-15 minutes.
Remove the chicken and place it in the oven or air fryer for 6-8 minutes to completely golden.
Add 3 cups of basmati rice.
Add 4 cups of hot water and cook for 10 minutes over medium heat.
After 10 minutes open the lid and add half of the fried carrots and raisins.
Cook covered for another 20 -25 minutes over low heat or until the water is absorbed and rice is perfectly cooked.
