High Protein Low Calorie Blueberry Muffins!
This recipe makes 18 muffins. The macros at the end of the video are approximate and based on the ingredients I used. Yours may be slightly different.
• Preheat oven to 350°F (177°C).
• In a large bowl, whisk together:
• 🫐 4 ripe bananas, mashed
• 🫐 1 cup unsweetened applesauce
• 🫐 2/3 cup zero calorie maple syrup
• 🫐 3/4 cup unsweetened milk of your choice (or water)
• 🫐 2 tsp vanilla extract
• In another bowl, sift together the following dry ingredients:
• 🫐 180 grams protein powder of choice
• 🫐 150 grams All Purpose Flour
• 🫐 3 tsp baking powder
• 🫐 1 tsp baking soda
• 🫐 2 tsp cinnamon
• 🫐 1/2 tsp salt
• Mix dry ingredients into the wet until incorporated, then fold in
• 🫐 240 grams frozen blueberries (do not thaw)
• Divide evenly between 18 well greased muffin wells. Do NOT use paper liners! They WILL stick, and it's horrible.
• Bake for 25 minutes, then check done-ness with a toothpick. Bake more as necessary. I baked mine for 30 minutes.
• Cool 5 minutes in the tray, then move muffins to a cooling rack.
• TRUST ME, cool completely before enjoying!
