Looking for an easy-to-make and flavor-packed dinner or lunch? This stuffed sweet potato recipe is perfect for you. It's a quick way to elevate sweet potatoes to another level of deliciousness that your whole family will love.
Instructions:
Clean the sweet potatoes thoroughly under running water. Place them onto a baking pan and bake at 365°F (185°C) for 50 to 60 minutes or until tender.
While the sweet potatoes are baking, finely chop the onion and fresh parsley.
Heat a saucepan over medium-high heat and add olive oil. Add the ground beef to the saucepan and cook the ground beef, stirring continuously until it turns brown.
Add the chopped onion and minced garlic to the ground beef and stir to combine.
Continue cooking for 1 to 2 minutes, then add tomato paste, salt, coriander powder, paprika, and black pepper to the mixture. Mix all the ingredients while stirring under medium heat.
Add water to the mixture and keep stirring and cooking for another 2 to 3 minutes until the ground beef mixture is cooked through.
Add the fresh parsley and quickly mix it into the ground beef mixture. Set the ground beef mixture aside to cool slightly.
Once the sweet potatoes are baked, use a knife to open them in the middle. Use a fork to mash the sweet potato flesh, creating a space for the stuffing.
Season the sweet potato flesh with salt and black pepper and place one-third of the ground beef stuffing in each sweet potato.
Sprinkle each stuffed sweet potato with shredded cheese.
Bake the stuffed sweet potatoes at 350°F (175°C) for about 10 minutes, or until the cheese melts.
Serve while still warm with a summer salad of your choice.

620 g sweet potatoes (or 3 medium sized sweet potatoes)
300 g ground beef
2 tbsp. olive oil
60 g onion
20 g fresh parsley
1 large garlic clove
1/4 cup tomato paste (60 g)
1/4 tsp. salt
1/2 tsp. coriander powder
1/2 tsp. paprika
Black pepper (to taste)
Water (up to ¼ cup)
60 g cheddar cheese (or your cheese of choice)
