Peach Bread - A Delicious Sweet Bread with a Definite Flavor of Summer!

Peach Bread
4 eggs, slightly beaten
1 cup oil
2 cups mashed overripe peaches
3/4 cup water
1 Tablespoon peach flavoring
3 cups sugar
3 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 1/2 teaspoon salt
2 cups cubed peaches
GLAZE
3 3/4 cups powdered sugar
1/2 cup hot water
Pinch of salt
1 teaspoon peach flavoring
Preheat oven to 350° degrees.
Peel and cube 2 cups of peaches.
Peel and mash peaches to acquire two cups of puréed peaches.
Combine eggs that are slightly beaten, oil, puréed peaches, water, and peach flavoring.
Stir together the flour, baking soda, cinnamon, and salt. Add the flour mixture and the sugar to the liquid ingredients. Stir in the cubed peaches.
Pour into two 9” X 5” loaf pans that are greased and lined with parchment paper and bake 50 to 60 minutes, just until the center is done. (You can make muffins instead. Jumbo muffins need to bake about 30 - 35 minutes.)
Once the loaves of bread have baked and completely cooled, prepare the glaze by combining all four ingredients and whisking well. Make sure all lumps are out of the glaze before drizzling/pouring over the bread loaves.
