00:40 banana bread: recipe by @sophiethenutritionist
3 bananas, mashed
80g unsweetened apple sauce
80ml plant milk
2 tbsp maple syrup
vanilla to taste
2 tbsp flax seeds
80g small-cut oats
180g (whole wheat) flour
3 tsp cinnamon (+ any other spices you like)
1 tsp each baking powder and soda
big pinch of salt
— bake at 180°C for 55 minutes, cool completely
served with yogurt, fresh berries, nut butter + flakey salt

02:33 rice porridge:
2/3 cup (80g) short-grain rice, 1 cup (250ml) plant milk, 2/3 cup (160ml) water (or more if you want it creamier), pinch of salt
frozen blueberries + vanilla extract
vegan butter
1 tsp brown sugar + cinnamon + cardamom
flakey salt

04:12 tofu scramble: inspired by @bertiesbite
vegan butter for frying, 1 clove of garlic
1 block (400g) silken tofu (cut into cubes)
1 tsp turmeric, pinch of paprika, scrambled egg seasoning if you want**, 1 tbsp nutritional yeast, salt, pepper, 1 tbsp tahini*
served on toasted bread with mustard, tomato, chives and black pepper
*sub for vegan cream cheese or any other neutral nut butter
**add kala namak at the end for an eggy flavour

05:40 cornflake jars:
fruit of choice, plant-based yogurt of choice
about 6-8 squares of dark chocolate + 1/2 tsp coconut oil, 50g cornflakes (lightly sweetened)
50g plain, lightly sweetened cornflakes
flakey salt
— set in the fridge until the chocolate has hardened completely

07:30 chai porridge:
1 cup (250ml) soy milk, 1/2 cup (125ml) water, 1 bag of chai
2/3 cup small-cut oats, pinch of salt, sweetener of choice if you want
soy yogurt + 1 tbsp flax seeds (added after cooking to save the omegas)
tahini, sliced apple, flakey salt, extra soy milk
