So that means a $20 grocery budget is good for five meals! The recipes are quick & easy and will get a sizable amount of food on the table! From homemade pizza to a massive chicken bake, here are a handful of my favorite cheap dinners I like to cook for my own family. Typed Recipes:
Chicken Rice Casserole:
4-6 Chicken Drumsticks or Thighs
2 Cups of Uncooked White Rice
6TBS melted butter
5 Cups Chicken Broth
1 Cup Milk
1/2 Diced Onion
2 TBS flour
1tsp Italian Seasoning
1/2 tsp Garlic Powder
1/2 tsp Paprika
Salt + Pepper
Grease a 9X13 baking dish. Add rice, flour, onion and 3 TBS of melted butter to the baking dish and stir to combine. Pour in the broth and milk stir everything together. Place chicken on the top. Evenly pour the last 3TBS of melted butter on. Season with all of the seasons. Cover with foil bake in a preheated oven to 350 for one hour. After the hour take the foil off and bake for an additional 30 minutes.
Lentil Soup:
1 cup lentils
2 large carrots
1/2 onion
2 15oz cans stewed tomatoes
1 russet potatoes
4.5 cups veggie broth
2.5 TBS tomato paste
1tbs olive oil
1/2 tsp paprika
1/2 tsp oregano
1/2 tsp Basil
Pepper
Chop your veggies. In a large pot heat the oil then add the carrots and onions. Once the carrots and onions start to get soft add the tomato paste in, stir to combine. Add potatoes, lentils, stewed tomatoes, seasonings, and broth. Let simmer covered for 45mins-1hr (until the lentils are soft and falling apart)
Sausage & Potatoes:
13 oz turkey sausage
3 Russet Potatoes
1/2 tsp paprika
1 tbs olive oil
Salt + Pepper
Bake in a preheated oven to 350 for 45 minutes (every 15 minutes stir)
