Ingredients:
Eggs – 3
Onion – 1 medium (finely chopped)
Tomato – 1 medium (finely chopped)
Green chilli – 1 (finely chopped, optional)
Ginger-garlic paste – ½ tsp
Turmeric powder – ¼ tsp
Red chilli powder – ½ tsp
Coriander powder – ½ tsp
Garam masala – ¼ tsp
Fresh coriander leaves – 1 tbsp (chopped)
Oil – 2 tbsp
Salt – to taste
Method:
Heat oil in a pan, add chopped onions, and sauté until golden brown.
Add ginger-garlic paste and green chilli. Fry for 1 minute.
Add tomato and cook until soft and the oil starts separating.
Add turmeric, red chilli, coriander powder, and salt. Mix well.
Break the eggs directly into the pan. Stir immediately and keep mixing on low-medium flame.
Cook till eggs are scrambled and mixed well with masala.
Sprinkle a little garam masala and fresh coriander leaves.
Serve hot with roti, paratha, or bread.
👉 If you like it dry, cook a bit longer until moisture is gone.
👉 For a softer version, add 1–2 tbsp milk while scrambling the eggs.
