INGREDIENTS:
300 g Skinless Salmon Fillet
2 Large Pinches of Salt
1 tsp Corn Flour
1 tsp Light Soy Sauce
2 tsp Vegetable Oil
1/2 tbsp Ginger
1 tbsp Sriracha Sauce
1/2 tbsp Sesame Oil
1 tbsp Water Small Handful Coriander
STEP 1: MAKE MARINADE
Mix the marinade ingredients with the salmon into a bowl and set aside for 10 minutes to marinate.
STEP 2: CORIANDER
Meanwhile, prepare the dressing. Finely dice the coriander stalks and mix together with all the dressing ingredients. Roughly chop the coriander leaves for use as a garnish later.
STEP 3: SALMON AND SERVE
Transfer the salmon to a plate that is large enough to allow the strips to be spread in one layer. Steam over a vigorous boil for 3-4 minutes until the salmon flesh has become light pink in colour and looks firm. Serve piping hot with a scatter of chopped coriander and the dressing dolloped on top.
A QUICK TIP FROM THE DUMPLING SISTERS:
You can transform any pot or saucepan into a steamer as long it has a lid (if not, you can use a heavy plate). Simply place a small bowl inside the pot and fill the pot with boiling water to within a centimetre or two below the lip of the bowl. Just make sure that whatever dish you choose to steam the food in will fit inside the pot, and allow the lid to be on during steaming.
