For decades, the rising incidence of IBD has been linked to Western dietary patterns, but evidence on what triggers flares in established disease has been limited. In this video, Beatriz explains how the team analyzed dietary data from over 1,000 patients to answer the common clinical question: "What should I eat?"
She details the significant finding regarding meat intake in ulcerative colitis and explores why other factors like fiber and ultra-processed foods showed no consistent association with objective flare risk in this cohort.
