Moravia - Apricot Cheesecake and other Traditional Czech Recipes | At our Neighbour's Table

In South Moravia, July is all about apricots. For Martin Beránek, the harvest marks the beginning of a time when he bakes Moravian apricot cheesecake almost daily, using his great-grandmother's recipe. The trained pastry chef and his friend experiment a lot with the sweet fruit, creating savory chutneys and new dumpling variations. The Ilčík family, who are friends of theirs, usually cook in a traditional style. But in the height of summer, daughter Jitka also serves a rather unusual version of roast pork: the meat is sliced and grilled on a hot stone, and just before serving, Jitka pours a marinade made from fresh herbs and apricot beer over it — the beer is brewed in her own small specialty brewery.
