Ingredients
For the Potato Loaf
• Potatoes (peeled and diced) – 900 g | 6 cups mashed
• Italian bacon or pancetta (chopped) – 150 g | 6 slices
• Italian sausage (casing removed) – 225 g | ½ lb
• Butter – 30 g | 2 tbsp
• Egg (beaten) – 1 large | ~60 g
• Cheddar or Italian blend cheese (shredded) – 100 g
• Onion (finely chopped) – 100 g | 1 small
• Garlic (minced) – 2 cloves | 6 g | 2 tsp
• Dried Italian mixed herbs – 2 tsp | 2 g    • Italian Seasoning essence of classic Itali...  
• Salt – to taste
• Black pepper – to taste
• Fresh parsley (chopped, for garnish) – 8 g | 2 tbsp
Quick Tomato Sauce
• Olive oil – 1 tbsp | 15 ml | 13.5 g
• Garlic (minced) – 1 clove | 3 g | 1 tsp
• Chopped tomatoes (canned or fresh) – 400 g | 14 oz
• Tomato puree/paste 1 tbsp (optional)
• Dried Italian mixed herbs – 1 tsp | 1 g    • Italian Seasoning essence of classic Itali...  
• Sugar – ½ tsp | 2 g (to balance acidity)
• Salt & pepper – to taste
Preheat oven to 190°C (375°F). Grease a 900 g / 2 lb loaf tin
Bake for 30–35 minutes until golden and firm. Let rest for 10 minutes.
