Full Recipe
Bread
Flour AP or Bread Flour - 4 Cups (512g) (Bread Flour improves the rise)
Kosher Salt - 2 tsp
Yeast (Dry Active or Instant) - 2 tsp
Water - 100 - 105 degrees - 2 C (or Wooder)
Olive Oil for the top and fingers (EVOO)
Butter and Olive Oil to grease the pan
Sea Salt Flakes - as desired
Garlic mix from below
-- Combine flour and salt
-- If using Dry Active yeast, dissolve in warm water, pause for a few minutes
-- If using Instant yeast, combine into flour/salt mixture
-- Add water to Flour mix, stir
-- Splash with a little olive oil
-- Cover and put in fridge overnight
-- Butter and Oil pan (9 x 13 or 2 smaller pans)
-- Put the dough in the pan, turn it over a couple times, spread it a bit
-- Let rise 2 to 4 hours until doubled and obviously bubbly
-- PREHEAT Oven to 450
-- Splash with olive oil
-- Dimple dough with oily fingers
-- Sprinkle the right amount of sea salt flakes
-- Bake 20 to 28 minutes, or longer. Bread should be browned.
-- Spoon or brush on garlic butter oil mix, smear around (probably won’t use all of the garlic, just save it for a favorite recipe)
-- Remove from pan and cool on cooling rack

Head of garlic smashed (roasted with a couple Tbl olive oil)
Butter - 3 or 4 Tbl
Olive Oil - couple Tbl
Heat, stir
