Try jiggly Japanese strawberry & whipped cream pancakes!
Souffle Pancakes Recipe:
3 pcs (8x4 cm/ 3x1.6 inch)
2 egg yolks (L)
15 g milk
30g flour
1/8 tsp baking soda
Meringue (whipped egg whites):
2 egg whites (L)
1/4 tsp salt
1/4 tsp cream of tartar (or citric acid)
30 g sugar
1/2 tsp vanilla sugar (or 1/4 tsp vanilla extract)
5 g egg white powder
100 ml cream 35% + 10 g icing sugar
strawberries
blueberries
Use a scale if possible.
Cook over very low heat, just above the minimum!
For the molds use baking paper strips 35x4 cm/ 14x1.6 inch (or you can make a 2-layer strip - 50 cm/20 inch long - it will be more stable). You can skip using the mold, but then a certain fall cannot be avoided (about 2 times).
You can skip using egg white powder.
Cream of tartar and baking soda can be replaced with 1/2 tsp of baking powder), but the result may be different.
