Tennessee Onions: Cheesy, Buttery, and Full of Flavor

1 large Vidalia onion (or another sweet onion)
2 Tbs. of Brummel and Brown margarine (or another margarine/butter) Softened
1 and 1/2 cups of Reduced Fat Mexican Cheese Blend (or cheese(s) of your choice)
1/2 tsp of pepper
1/2 tsp of garlic salt
Optional: Grated parmesan cheese
1. Preheat oven to 350 degrees.
2. Peel onion and slice it into 1/4 inch pieces.
3. Separate the rings.
4. Place the rings in a large bowl and sprinkle with garlic salt and pepper. Toss to coat.
5. Spray an 8 x 8 inch dish or a 2 qt dish with nonstick cooking spray.
6. Place the onion rings in the dish.
7. Top the onions with dollops of softened margarine or butter.
8. Sprinkle the 1 and 1/2 cups of cheese on top. Feel free to add more cheese if you prefer.
9. Place in the oven for 30 minutes uncovered.
10. After the onions have cooked, sprinkle with parmesan cheese and extra pepper (both are optional).
