Easy Homemade Raisin Bread (Beginner Friendly)!
1 and 1/2 cups of very warm water
4 cups of all-purpose flour plus up to 1/4 of a cup extra if too sticky
1/4 cup of sugar
2 cups total raisins
2 tablespoons of cinnamon
1 level tablespoon of quick rise active dry yeast
This recipe is made from the heart! It is the easiest recipe without many ingredients! No egg, milk, or butter inside my dough, but it is simply amazing!
Mix all ingredients in a large bowl, keeping back 1 cup of flour. Once just blended, add the dough to a food processor or stand mixer with a dough blade or hook. Make sure to work it well until it is very stretchy and smooth. Add all raisins (not soaked in water) except for 3/4 cups to add later, during the shaping. Blend again, along with the cinnamon.
If the dough is too sticky, add a bit more flour; up to 1/4 cup if needed. Once incorporated well, add the dough back to the bowl and cover as shown. Let rise until double in size. In the meantime, soak the 3/4 cup of raisins in hot water to plump up and soften. Remove the dough to a floured surface and flatten out. Pat the wet raisins with a paper towel and add them to the surface of the dough. Work them in as shown in the video and divide the dough in two. Shape to fit like a log into two bread tins that are sprayed with oil. Brush the tops with milk.
Bake in a 400℉ oven for about a half hour or until dark golden. Remove to a cooling rack and slice a thick piece to try while it is still a bit warm. This bread is incredible in both flavor and texture!
