Today I am sharing a simple and tasty Odia Style Poi Patra Bara Recipe (ପୋଇ ପତ୍ର ବରା).
Poi Patra (Malabar Spinach leaves) is a popular leafy vegetable in Odisha. By mixing it with besan and spices, we prepare delicious crispy baras, perfect as an evening snack, tea-time snack, or a side dish with rice & dal.

This recipe is very easy and can be made in two ways – chopped poi patra bara (tawa fry) and crispy fritters (deep fry). Try it at home and enjoy the authentic taste of Odisha!

Ingredients:
Poi patra (Malabar spinach leaves) – 2 cups (finely chopped)
Besan (gram flour) – 4-5 tbsp
Rice flour – 2 tbsp (for crispiness)
Onion – 1 small (finely chopped)
Green chilli – 1–2 (finely chopped)
Crushed Ginger–garlic – ½ tbsp
Turmeric powder – 1 tsp
Red chilli powder – 1 tsp
Curry powder-1tsp
Salt – to taste
Mustard oil (or refined oil) – for shallow fry
Preparation:
Step 1:
Wash poi patra well and chop finely.
Take them in a bowl, add onion, green chilli, Crushed ginger–garlic,Besan,Rice flour , turmeric, chilli powder, and salt.
Add 2-3tbsp water to make a semi-thick mixture (not runny, should bind together).
Step-2: Cooking:
Heat a tawa/pan with 2–3 tbsp oil.
Take small portions of the mixture and spread like mini baras/pakodis on the tawa.
Cook on medium flame till golden and crisp on one side.
Flip and cook the other side similarly.
Remove and serve hot.
Now Poi patra bara is ready to serve.
