Every month, I take one ingredient and craft something delicious with it—sometimes chosen by a fellow chef, sometimes by one of my Substack subscribers. For this episode, Chef Gabriel Rucker, of Le Pigeon and Canard here in Portland, Oregon, challenged me with Chorizo!
In this episode, I try a few techniques to incorporate chorizo flavor. I make a cheesecake, red pepper tuiles, sablé cookie crumble, and a chorizo caramel.
