Brined Roasted Turkey Breast w/Gravy
In this video, we cook a half turkey breast (3 lbs) sharing tips & tricks for the most flavorful, succulent meat and the perfect gravy to serve with it.
Although we are cooking a breast, all of these chef's secrets are applicable to the whole turkey (we even give the sized-up brine ratio below if you want to brine a whole bird).

Here is the Brine Recipe for a Whole Turkey (credit: Chez Panisse)
40 cups cold water (give or take a few cups)
2 cups kosher salt
1 cup sugar
Cloves from 1 head garlic, peeled
2 bay leaves, torn into pieces
1 branch fresh thyme
2 whole allspice, crushed (optional)
1 juniper berry, smashed (optional)
Brine overnight in a non-metal container in refrigerator, or in food-safe bags (I use doubled Reynolds turkey roasting bags) in ice chest packed with ice.

We’re going to start with teaching you how to make a brined roast turkey breast and gravy when you don’t want to cook a whole bird. This is the same method I use every year for a whole turkey, just sized down to a half breast (which is still around 3 lbs. of meat - enough for 3 meals for 2 people!).
The most common ways to use turkey leftovers are well-known and delicious - sandwiches, soup, or simply reheated for a Thanksgiving redux.
But I love the idea of making a completely new dish from the turkey meat to switch it up and make it interesting!
