How to make Lao Crispy Fried Rice – delicious Nam Khao | S1 E8

Lao Crispy Fried Rice (Nam Khao)

Serving size: 2-3
Ingredients:
1 ½ uncooked white rice (when cooked, it will be approx. 3 cups) – cook in rice cooker or your preferred way
Vegetable oil (enough for deep frying)
1 large package (9 oz | approx. 1.125 cups) of fermented pork (found at most Asian markets)
1 lb ground pork
½ cup grated (shredded) coconut (substitute: ½ cup coconut milk/cream)
1 tsp salt
1 tsp MSG
1 tbsp thin soy sauce
¼ cup mint leaves
1-3 tbsp chopped chives / onions
½ cup chopped cilantro
½ dry roasted unsalted peanuts
Dry Chili peppers
Instructions: Cook rice ahead of time and let cool approx. 15-20 minutes. Break apart fermented pork sausage and set aside. Wash and cut up herbs – set aside. Combine raw ground pork, coconut, rice, salt, and msg in mixing bowl and mix thoroughly. Form into manageable balls and flatten into patties with palm to desired thickness for ease of frying the patties to crispy goodness – see video. Place patties in fridge for 30 minutes to 1 hour to solidify before frying (Note: It’s ok to fry them once you form the patties, but they might fall apart going into the fryer depending on how packed / dense you form the rice-pork patties). Fry patties for 10 – 20 minutes (Note: If frying patties immediately after removing from the refrigerator, they will be cold, and it will affect the frying time). Remove patties onto paper towel and let cool for 5-10 minutes. While oil in fryer remains hot, toss in chili peppers and fry for 2 minutes; remove from oil (place on paper towel.). Using your fingers (careful) or pestle / rolling pin, break apart the fried rice patties into desired chunks – see video. Add thin soy sauce and fermented pork – mix thoroughly; add herbs. Garnish with dry roasted unsalted peanuts and chili peppers.
Tips: I like my Lao nam khao (fried rice) spicy and add 1 tbsp chili pepper flakes in addition to the crispy fried dried chili peppers.
