Thank you for joining me for another super packed day in the life video! I have updates for so much of what I talked about! The cookies turned out with just the tiniest hint of sweetness, definitely not enough for me, but Adam liked them a lot. (He hasn't eaten sugar in 6 months, so he's really enjoying them.) Likely if you just used sweetened carob or chocolate chips they would turn out much better.
My homeground tortillas were okay, but seemed a bit dry. There were a few random tortillas that turned out PERFECTLY and were soooo good, but most of them were not. I have no idea why. The texture when you tear them was definitely not as glutenous as typical tortillas, but that's to be expected. I'll continue experimenting and hopefully get this thing down!

Potatofu Soup Recipe (I've been using the cannellini beans instead because I need to use them up, but I originally made this recipe for tofu. I find I like it better with the beans, but my family largely prefers the tofu.)
4 potatoes, scrubbed and cut into cubes
1 16 oz block tofu, cubed
1/3 cup caramelized onion
9 cups water
1 tbsp garlic powder
1/2 tsp thyme
2 tbsp lemon juice
Boil all of these ingredients for 20 minutes or until potatoes are soft. (Caramelize a medium onion in the pan first if you don't have some prepped in the fridge.) Turn off the heat.
After potatoes are soft, mix in 2 tbsp white miso dissolved in 1/4 cup water and at least 4 cups of chopped spinach. (I used kale and zucchini this time around, so I had the greens and veggies in the soup from the beginning. Kale is much tougher than spinach. Adapt as needed to your taste and what you have on hand.)
I always like to add some hot sauce to my bowl. You may or may not like to add a little extra salt. Enjoy!
