පොල් පිටි කේක් | Coconut flour banana cake

Ingredients:
1 cup coconut flour
3 ripe bananas
1/4 cup virgin coconut oil (or coconut oil, olive oil, sunflower oil etc.. OR butter/margarine 50g)
2 eggs
2tsp vanila
1 1/2 tsp baking powder (if using 5 bananas add 2 tsp baking powder)
1/4 tsp salt
1 1/2 tsp cinnamon powder
1 tbsp Arrow root Flour (Optional) (OR 2 more bananas or 1tbsp cornflour or 1tbsp bread flour/all purpose flour)
[Arrow root Flour අනිවාර්ය නැ. එ වෙනුවට තව කෙසෙල් ගෙඩි දෙකක්, කොන්ෆලවර් නැත්නම් පාන්පිටි යොදා ගන්න පුලුවන්]
2tbsp Ground Jaggery (Optional)
Cashew and plums (Optional) or dates
Method:
Smash bananas using a smasher / or plus twice in a blender. Don't make banana paste more liquidy.
Add eggs to banana paste and mix.
Add oil and mix further.
Add baking powder, salt, cinnamon powder, arrowroot powder, jaggery/honey and Mix.
Mix.Mix and Mix.
Add coconut flour. Mix a bit more.
Add cashew, plums and dates and mix one last time.
Transfer the Mixture to a greased pan.
Bake in a preheated oven at 200'c for 45-50 mins.
After 50 mins, you can taste a piece of coconut flour banana cake.
