Here is a reason to make polenta - a pasta! It is called cresc'tajat - pronounced 'cresh-tie-et' - from the Pesaro Urbino province in central Italy. It's what frugal cooks used to make with their leftover polenta. And it is served with beans, as Anna does in this video, or stewed wild greens. The ingredient list is as follows:
300g polenta cooked and cold (make it ahead of time)
100g flour '0' /all purpose flour
50g lardo macinata - cured pork fat
4 tablespoons of olive oil
50g sausage meat & some pork skin (optional)
300g borlotti beans cooked with a celery stick and carrot, plus the broth
200g tomato passata
1 garlic clove, 1 onion,
salt and pepper
To serve: 50g pecorino grated, extra virgin olive oil
