Sweet Potato Cookies by Kyong Weathersby/Holiday Cookies/Healthy Cookies/Gluten-Free/Plant Based

Wonderful holiday cookies or any day cookies that delicious, nutritious, and healthy that you can enjoy them without any guilt.

SWEET POTATO COOKIES

1 c sweet potatoes, cut in small cubes
¼ c + 2 T soy milk
1 ½ c oat flour
¼ c turbinado sugar
2 tsp stevia
¼ + 1/8 tsp salt
½ T aluminum-free baking powder
1 tsp coriander
2 T vegetable oil or vegan butter
1 tsp vanilla
Walnut halves

Preheat oven to 375 degrees. Put sweet potatoes and soy milk in a blender and blend until creamy. Set it aside. In a mixing bowl, put oat flour, turbinado sugar, stevia, salt, aluminum-free baking powder and coriander. Mix well. Add sweet potato mixture, vegetable oil and vanilla. Mix well with spoon then mix with hand. Drop onto an oil sprayed cookie sheet by
1 tablespoon portion. Flatten with wet fingers. Place each walnut on cookie and press down and bake for 20 minutes or until lightly brown. Yummy!
