Coach Meg’s Creamy Cauliflower Soup (Instant Pot, WFPB & Oil-Free)
👩🍳 Ingredients (serves 4–6):
1 large head cauliflower, chopped into florets
1 medium onion, chopped
2–3 cloves garlic, minced
2 medium Yukon Gold potatoes, peeled and diced (for creaminess)
2 medium carrots, chopped
3 cups water (plus more for thinning)
1 cup unsweetened plant milk (soy, almond, oat, or cashew)
2 tablespoons nutritional yeast (for that cheesy depth)
1 teaspoon miso paste (optional but amazing for umami)
½ teaspoon smoked paprika (for cozy flavor)
¼ teaspoon turmeric (color + anti-inflammatory boost)
Salt-free seasoning or herbs to taste (thyme, parsley, or chives)
Fresh lemon juice to finish
Recipe:
1. Sauté (no oil!):
Add a few tablespoons of water.
Sauté onion, garlic, carrots, and potatoes 3–5 min until onion softens.
2. Add cauliflower, Water, and Seasoning:
Stir in cauliflower, water, smoked paprika, turmeric, and nutritional yeast.
Cancel Sauté mode.
3. Pressure cook:
Cook on High Pressure for 6 minutes.
Let release naturally for 10 min, then quick release.
4. Blend it creamy:
Add plant milk
Blend with immersion blender (or in batches).
5. Taste & finish:
Add lemon juice to brighten. Adjust thickness with extra broth or milk.
6. Serve & enjoy:
Garnish with chives, green onions, or roasted chickpeas.
💚 Bonus Tips:
Add soaked cashews before blending for extra creaminess, or extra nutritional yeast for a “cheesy” vibe.
This soup freezes beautifully, reheats perfectly, and actually tastes better the next day.
