📝 INGREDIENTS:
• 2 cups wholewheat/wholemeal/atta flour
• 1 cup high protein bread flour (sub. all-purpose flour)
• 1 tsp salt
• 2 tsp instant/active yeast
• 2 tbsp honey
• 2tbsp orange juice (to balance out the wheaty taste)
• 2 tbsp soft butter or olive oil
• 1 small egg at room temperature
• 1 cup of warm milk
• Egg wash (egg yolk+1tsp milk)
• Honey butter glaze (2-3 tbsp melted butter + 1 tbsp honey + tiny pinch of salt unless butter is salted)
❃ PROCESS ❃
1. Add the yeast and 1 tsp of honey to a cup of warm milk and stir. Cover and let it activate. Will turn frothy/foamy.
2. Prepare a large bowl/stand mixer, add in the flours and salt. Whisk them and then pour in the egg, orange juice, rest of the honey and activated yeast mixture. Mix again.
3. Next add the soft butter and stir the whole thing with a spatula to combine. If you have the time, rest for 15-30 min before kneading. This will allow the whole wheat flour to hydrate and make the dough softer and less likely to tear the gluten strands during kneading.
4. If using a stand mixer, attach the dough hook and knead at medium speed (at level 2-3) for 7-8 min until dough is smooth, springy, and elastic. Dough will still be quite sticky, not to worry though. The whole-wheat needs the moisture to give you a soft bread! If using hands to knead, you will need at least 15min of kneading on a well-floured surface. Try not to add too much flour and use a dough scraper to make it easier to handle the sticky dough. Form a ball and place into an oiled bowl. Cover and leave to rise in warm place for 45 min to 1 hour until doubled in size. (Do not let it over proof!).
5. Once your dough has doubled, gently deflate and transfer onto a lightly floured surface and divide into 16 pieces (to make small sized rolls). While working on each roll, cover the rest with a damp towel to keep them from drying out. Pinch the seams of each dough ball together at the bottom and then roll on a greased surface to get a smooth ball (with seams sealed at the bottom). Place on a greased/lined deep baking pan(9x9 inch) and keep covered. Leave them to rise again for another 30-45 min or till almost doubled.
6. Preheat oven to 190c and brush the rolls with egg wash and bake for 10 min. Then take out the pan and brush the tops generously with honey butter and continue to bake for another 10 min. Total bake time will be around 20 min.
7. Once they are done and a lovely golden brown, remove and immediately brush with more honey butter. Cover with a kitchen cloth to keep them soft while they cool.
