Inspired by traditional Middle Eastern flavours! Here’s how you can make them at home:

Ingredients:

500 grams ground lamb
1/4 tsp Bi-Carb Soda
Salt and pepper to taste
Paprika to taste
Sumac to taste
1 grated onion (juice drained)
1/2 red capsicum, finely chopped (juice drained)
Finely chopped parsley

Instructions:

1. In a large bowl, mix ground lamb with Bi-Carb Soda, salt, pepper, paprika, and sumac.
2. Add the grated onion and chopped capsicum, ensuring the juices are drained to avoid excess moisture.
3. Stir in the chopped parsley and mix well.
4. Use the onion and capsicum juice to prevent the meat from sticking to your hands.
5. Form the meat onto skewers, pinching with your thumb and index finger to create ridges.
6. Grill the kebabs, turning every 30 seconds to prevent the meat from falling off.

💡 Pro Tips:

🔸️ Skip the binders! I know a lot of Aussies use eggs & breadcrumbs. You need a high fat ratio in the meat, which will act as a natural binder.
🔸️ Work the meat thoroughly until it’s pasty and sticky. This ensures the meat stays on the skewer during grilling.
