Doubles is one of Trinidad’s most loved street foods — soft, fluffy bara (fried flatbread) filled with spicy curried chickpeas. In this version, I’ve added a delicious twist by cooking the channa with tender chicken pieces for extra flavor.
In this video, I’ll take you step-by-step through making the bara dough and the chickpea and chicken curry filling. Perfect for breakfast, lunch, or a satisfying snack with that true Caribbean taste.

Ingredients for Bara Dough:
1 cup all-purpose flour
100 ml water
½ teaspoon salt
½ teaspoon turmeric (or curry powder)
2 teaspoons dry yeast
Ingredients for Chickpea and Chicken Curry Filling:
1 cup chickpeas (soaked overnight or 1 can, drained and rinsed)
200–250g chicken (boneless, cut into small pieces)
1 medium onion, chopped
2 cloves garlic, minced
1 green chili or Scotch bonnet pepper (optional, for heat)
1 teaspoon curry powder
½ teaspoon turmeric
½ teaspoon ground cumin
1 teaspoon salt (or to taste)
1 teaspoon black pepper
2 tablespoons vegetable oil
1 ½ cups water or chicken stock
