Originally hailing from the Netherlands, this Dutch crunch bread (aka Tiger Bread) is popular in the Bay Area. It's a study in contrasting textures: Its soft, squishy insides are offset by the crispy, mottled outer coatings. Here, we’ve made the bread into rolls for superior sandwiches. To make them, you paint a mixture of water, rice flour, sugar, and yeast over the rolls partway through rising. As the rolls grow in the oven, the topping sets and cracks and its sugars and starches brown and develop flavor.
