Apricot Whiskey Smash Cocktail Recipe!

Time for a refreshing highball cocktail!

I got the idea for this cocktail when I reviewed the Two Stacks Apricot Fruit Drops whiskey, which is a nice Irish whiskey which was finished in an Apricot Brandy cask, to give it some really fruity notes. I wanted to highlight them in a cocktail, and figured that a highball was the perfect choice! Combining the classic highball with some smashed fruit really highlights the fruity notes in the whiskey.

For me, the perfect whiskey highball cocktail recipe is whiskey, a little bit of citrus and something sparkling. For the citrus and sparkles, I tend to lean into my whiskey, and the flavours I’m trying to achieve.

For this recipe, I leant into the apricot flavours of the whiskey by muddling some fresh apricot, and used Lemon Juice and some Soda Water, then topped it off with a garnish of Apricot and mint to highlight the fruity notes.

Apricot Whiskey Smash Cocktail Recipe
Half an Apricot
Sprig of Mint
45ml Whiskey
15ml Lemon Juice
Soda Water

Muddle the apricot in a shaker tin, add ingredients and shake to mix
Strain into a highball glass with ice, top with Soda Waterand garnish with a slice of Apricot
