皮薄馅大的无麸质饺子!Best Ever Gluten-free Dumplings!

饺子皮原料(可做10个左右)
水磨粘米粉 80克
木薯粉(也叫木薯淀粉,菱粉) 24克
无麸质黄原胶 1克或1/4 tea spoon
盐 1克或1/4 tea spoon
开水 40克
常温水 45克
饺子馅原料(可做45个左右)
韭菜 260克
鸡蛋 2个
虾仁 135克
五花肉馅 120克
盐,糖,葱姜水 适量
无麸质酱油,白胡椒粉,香油 适量
步骤(视频未做演示):
1. 鸡蛋液搅匀 炒熟至小块,晾凉备用;
2. 五花肉馅放入盐和糖。分三次加入葱姜水,每次加入后朝一个方向充分搅拌至水分被肉馅吸收。再加入无麸质酱油和白胡椒粉拌匀;
3. 加入虾仁,晾凉的鸡蛋碎拌匀;
4. 最后加入韭菜,香油拌匀即可。
小贴士:
1. 黄原胶不能省略,它起到粘合剂的作用。通常黄原胶都是玉米淀粉制成,但也有由小麦制成的,因此要购买无麸质黄原胶。每天食用15克以下都是安全的。
2. 我用的盐是喜马拉雅粉盐,含有更多的矿物质,可替换为普通食盐或省略。盐的加入也有增加筋度的作用。
3. 由于米粉和木薯粉吸水性受品牌,季节,室内湿度等因素影响,加入的量可能和食谱中不同。和面时的水要少量多次的加。
4. 面团开始比较粘手,揉一会之后就感觉水分都吸收了,和好的面团不粘手,柔软有一定的延展性
5. 面团很容易变干,分好的剂子和包好的饺子一定要盖好。
6. 建议开始做的几次用蒸的方法。掌握好了自家粘米粉和木薯粉的吸水性之后,也可以用水煮饺子,口感比蒸的还要好!
Ingredients of dumpling skin:
Rice flour 80g
Tapioca flour (or tapioca starch) 24g
Gluten-free xanthan gum 1g or 1/4 tea spoon
Salt 1g or 1/4 tea spoon
Ingredients of dumpling filling:
Chives 260g
Egg 2(two) large eggs
Shrimp without shell 135g
Ground pork belly 120g
Some salt, sugar, water soaked with green onion and ginger
Some gluten-free soy sauce, ground white pepper, sesame oil
Steps of making filling:
1. Make scrambled eggs, let it cool for while;
2. Add salt, sugar, water soaked with green onion and ginger to ground pork belly in three times, well stirred after each time. Then add gluten-free soy sauce, ground white pepper in the ground pork belly;
3. Add sliced shrimp, scrambled eggs.
4. Add sliced chives and sesame oil
Tips:
1. Gluten-free xanthan is a must. It is safe to consume less than 15 gram xanthan gum in one day.
2. Salt can be any kind of salt. It plays a role in adding strength to your dough.
3. The amount of water may vary because of the brand of rice flour, tapioca flour, season, or your room humility, so it's better to add a few amount each time.
4. The dough is sticky at first, after kneading some time, it will be soft, non-sticky and with some elasticity.
5. The dough is very easy to become dry, so cover it and dumpling well when making dumplings.
6. It is better to steam the dumplings at the first few times. When you get skillful you may try boil them in water. They taste even better then steaming!
