Chicken Malai Makhni Handi
Serve 4-5
Ingredients:
-Chicken boneless 600grms (chicken baghair hadi)
-Cream 1cup (Malai)
-Lemon juice 3 tbs (Nebo ka rus)
-Cumin seeds roasted crushed 2 tsp (zeera)
-Ginger Garlic paste 2 tbs(adrak Lehsan paste)
-Raw papaya paste 2 tbs (kacha papeeta)
-Salt 2 tsp (namak)
-White pepper 2 tbs (safaid mirch)
-Cashew nuts paste 12 cashews (kaju)
-Green Chillies 6-7 (Hari mirchay)
-Yogurt 1cup (Dahi)
-Milk 1 cup
-Kasuri Methi crushed 1&1/2 tsp
-Oil 8 tbs (teel)
-Coal 1 piece (Coyla)
-Butter 3 tbs (makhan)
-Green cardamom 3 (choti illaichi)
-Cloves 3 (laung)
-Onion paste of 2 medium (piyaz)
Direction:
-Marinate bone less chicken with cream, lemon juice, cumin seeds (roasted crushed) , ginger garlic paste, raw papaya, salt, white pepper, cashew nut paste (soaked cashews for 2-3 hours then make smooth paste in blender),crushed green chillies, dahi, mix well and marinate for 1 hour. Refregerate marinated chicken.
-Add oil in pan, fry marinated chicken with all marination, dry all water and set aside.
-Give coal smoke to chicken for at least 10 minutes.
-For Gravy add 4 tbs oil & 2 tbs butter in pan, saute green cardamom and cloves now add onion paste of 2 medium onion, add ginger garlic paste 1 tbs, crushed green chillies 1 tsp, cream 4-5 tbs mix well, now add crushed white pepper, roasted cumin seeds, salt, yogurt 1/2 cup, milk 1 cup, mix well all ingredients let the oil separated now add chicken mix well, cover the pan for 15 minutes on low flame. Add cream 6-7 tbs, in the end add Kasuri Methi crushed 1&1/2 tsp again cover the pan for 5 minutes now add green chillies and dish out.
Serve with Naan, chapati, paratha....
