Aleppo Mortadella مارتاديلا حلبية
For Mortadella dough
3 pounds or 1-1/2 kilo very lean ground pasty meat beef or lamb
1/2cup of unflavoured bread crumbs
2 eggs one egg white saved for egg wash
1 teaspoon salt
1 teaspoon Aleppo crushed pepper or paprika
1/2 teaspoon of Aleppo 7 spice or all spice
1/2 teaspoon of black pepper
Boiling water to cook mortadella
1/2 cup of white or Apple vinegar Do not use balsamic vinegar
1 teaspoon of tomato paste to add in the boiling water
Small peace of cinnamon
2 piece of cloves 2 bay leaves
Couple cardamoms
Salt
