Stir-fried Pork with Pineapple 黄梨炒肉片|Nyonya Dishes | Cook with Pam ASIA TO OZ

Refreshing, lightly sweet, mildly tangy, and tender — a simple, home-cooked style dish that’s not spicy or heavy.
It’s less thick and saucy than Thai sweet-and-sour, and more delicate in flavor because the pineapple juice does most of the seasoning.

Ingredients 材料:
1 pineapple (cut into bite-sized sliced), 1 个黄梨(切实小片)
400g pork slices, 400克猪肉片
5 slices young ginger,shredded, 5片嫩姜(切丝)
1 red chilli, chopped, 1 条红辣椒(切碎)
5 shallots, sliced, 5粒红葱头(切片)
8g dried black fungus, soaked to soften and torn into small pieces, 8克干木耳(泡软,撕小朵)
2 tsp toasted white sesame seeds, 2 茶匙炒香白芝麻

Seasonings 调味料:
1 tbsp light soy sauce, 1汤匙生抽
20g gula Melaka, 20克椰糖
1 tsp salt, 1 茶匙盐

What This Dish Tastes Like

1. Sweet & Tangy Pineapple Aroma
• Fresh pineapple gives a bright, fruity sweetness.
• The natural acidity keeps the dish refreshing, not heavy.

2. Lightly Savory and Fragrant Pork
• Pork slices marinated with pineapple juice become tender and slightly sweet.
• The marinade adds a gentle savory note rather than a strong soy-based flavor (since this recipe uses only 1 tbsp soy sauce).

3. Mild Heat
• The single chopped red chili adds a small kick but it’s not a spicy dish overall.

4. Aromatic Ginger & Shallots
• Ginger adds warmth and freshness.
• Shallots give a soft sweetness and fragrance typical of home-style Nyonya/Chinese stir-fries.

5. Soft but Earthy Black Fungus
• Black fungus has a crunchy-soft texture.
• It adds mild earthiness and a pleasant contrast to the juicy pineapple and tender pork.

6. Light Caramel Sweetness
• The gula Melaka adds depth — a gentle caramel-like sweetness that blends beautifully with pineapple.

7. Nutty Finish
• The toasted sesame seeds give a subtle nutty aroma in every bite.
