Black Bean Sweet Potato Casserole
-2 sweet potatoes
-1 1/2 cup crushed tomotoes
-1 cup veggie broth
-1 1/2 cup black beans
-1 lime
-1 tbl cilantro
-1/2 cup corn
-1/2 cup mixed onions and peppers
*Bake at 450 degrees for 45-50 minutes or until potatoes are tender

Cilantro Lime Corn Rice
-3 cups cooked rice
-1 1/2 cups black beans
-1 1/2 limes juices
-1 tbl cilantro
-salt
-1 1/2 cup corn

Black Bean Hummus:
-1 1/2 cup black beans
-1/3 cup veggies broth
-1 tbl garlic
-1 tbl cilantro
