✅Recipe bread
Ingredients:
400 ml of water
1 tbsp of sugar (20 g)
2 tsp of active yeast (7 g)
500 g of all-purpose flour, sifted
1.5 tsp of salt (10 g)
Instructions:
Mix 100 ml of warm water, sugar, active yeast, and 2 tbsp of flour from the total amount in a bowl. Let it sit for 15-20 minutes until the mixture becomes frothy.
Pour in the remaining 300 ml of water, sift the flour, and add salt (10 g).
Mix well for 7-8 minutes until the dough becomes sticky.
Cover the dough and let it rise in a warm place for 20 minutes.
Repeat this process three more times, each for 20 minutes, folding the dough 7-8 times each time.
After the final rise, generously coat the dough with flour and divide it into 6-8 portions depending on the size of your oven.
Shape the dough as shown in the video and place it on a floured surface or a silicone mat for proofing.
Cover and let it rise for another 20 minutes.
Preheat the oven to 425°F (220°C). Transfer the ciabatta to a baking sheet and bake for the first 10 minutes.
Lower the temperature to 375°F (190°C) and bake for an additional 10-15 minutes until golden brown.
Let the ciabatta cool before slicing. Enjoy your fragrant, thin-crusted, and crunchy ciabatta!
Note: You can also use a towel instead of a silicone mat for proofing.
