1. *Prepare the coffee*
Dissolve the instant coffee in the hot water. Set aside to cool slightly.
2. *Cream butter and sugar*
In a mixing bowl, beat the softened butter and sugar together for **2–3 minutes**, until light and creamy.
3. *Add wet ingredients*
Add the egg, vanilla (if using), and dissolved coffee.
Mix just until combined — do not overmix.
4. *Add dry ingredients*
In a separate bowl, whisk together flour, baking powder, cardamom, and salt.
Gradually add to the wet mixture and mix gently until a soft dough forms.
5. *Rest the dough (recommended)*
Let the dough rest for *10 minutes* at room temperature.
This helps the flavors develop and improves texture.
6. *Shape the cookies*
Scoop or roll the dough into balls about the size of a walnut.
