Limoncello!! Here's a quick and easy recipe:
15 Lemons
1 750ml Vodka
1.5 cups Water
1.5 cups Sugar
Remove the zest from the lemons. Avoid removing any of the pith. Place the lemon zest in a mason jar and fill it with your vodka. Close the jar and place it in a water bath set to 135f. Let this cook for 2 hours. While your vodka/lemon zest is cooking, make your simple syrup by combining the water and sugar together in a small pot. Heat till the sugar dissolves.
Once the vodka/lemon zest has finished cooking remove it from the water bath and let it cool. Add the simple syrup mixture a little at a time and taste. Once you feel it is sweet enough you are finished. Depending on the ABV of your vodka this recipe will produce a limoncello with an ABV of 20%. If you prefer a stronger Limoncello use Everclear in place of Vodka.
NOTE: If you use everclear to make this recipe increase the amount of sugar and water to the following (3 ½ cups Water and 2 ½ cups Sugar).
