Today I am going to show you how to make my Rhubarb Pineapple Jam, Gluten Free of course, and made with honey!
*When you are canning using the water bath method, use the processing time for your altitude.
This jam is delicious!! The rhubarb and pineapple go great together!! Cut your pineapple in smaller chunks than I did!

For the Rhubarb Pineapple Jam:
22 cups chopped Rhubarb (about 7 pounds)
8 cups chopped Pineapple (2 medium Pineapples)
10 cups Sugar (4 1/4 cups Honey)
Add the rhubarb and pineapple to a 12 Qt stock pot. Pour in the honey, bring to a simmer. Simmer, stirring often until thick. Ladle into jars and water bath process for 10 minutes, or according to your altitude.
I ended up with 20 (8oz.) jelly jars and a 4oz jar.
*If using sugar, add half the sugar, cook 15 minutes, then add the remaining sugar. Cook until thick.
