I thought this Sous Vide Butter Poached Lobster Tail came out great. I like my Lobster Tail a little on the firm side, so I set my Immersion Circulator at 140 degrees, and cooked it for an hour. Use a lower temperature if you like your Lobster soft or tender. See Below.
Sous Vide Lobster Tail Time and Temperature:
For Soft Lobster Tails 120 degrees for 45 to 60 min.
For Tender Lobster Tails 130 degrees for 45 to 60 min.
For Traditional (Firm) Lobster Tails 140 degrees for 45 to 60 min.
