In this video, I’m brewing an allgrain light crystal lager, featuring Voyager Atlas malt, light crystal malt, and the iconic Aussie hop — Pride of Ringwood. This is my first time brewing with both crystal malt and Pride of Ringwood hops, so I’ve kept the additions light to test the impact. We’re using M84 Mangrove Jack’s yeast to bring out clean, crisp lager characteristics, with a gentle malt backbone and subtle bitterness.
Voyager Atlas is an Australian grown pale malt from the Western Riverina region. I've used this multiple times before for Lagers and Pilsners and I love the results. The intention of the light crystal malt is to provide some sweet caramel and toffee flavours to the finished beer, in addition to contributing to the body and foam stability.
I'm using the Digiboil kettle for my allgrain brew. This is the same base kettle that is used for the Brewzilla, just comes without all the bells and whistles. Inexpensive and relatively simple to use!
The Fermzilla will be used for pressure fermentation, as this helps reduce the time taken to produce a lager. I generally aim for 10-13 PSI depending on the fermentation temperature.
This brew is designed to be clean, crisp, and sessionable, with just a hint of crystal sweetness. Perfect for fans of Australian lagers and those curious about Pride of Ringwood hops.
Recipe Details:
• 4.5kg Voyager Atlas Malt
• 150g Acidulated Grain
• 150g Crystal Malt
• 25g Pride of Ringwood Hops
• M84 Mangrove Jacks Lager Yeast
• 1 Whirlfloc Tablet
Mash & Boil Schedule:
• 21L Strike Water at 71°C
• Mash for 60 mins at 67°C
• Mash Out at 75°C for 10 mins
• Sparge with 9L water at 75°C
• Boil for 60 mins
• 10g Pride of Ringwood @ 60 min
• Whirlfloc Tablet @ 15 min
• 15g Pride of Ringwood @ 10 min
Fermentation Schedule
• Pitch yeast at 18°C
• Ferment at 18°C 12-13 PSI for 5-7 days
• Diacetyl rest at 22°C for 2 days
• Cold crash at 2°C for 7-10 days
• Lager at 2°C for 2-6 weeks
Results - Crystal Ring Lager
• Starting Gravity 1.040
• Final Gravity 1.007
• ABV 4.3%
• IBU 15
