Yema cake is a Filipino chiffon cake with a custard filling known as yema. It is generally prepared identically to mamón, with the only difference being that it incorporates yema either as frosting, as filling, or as part of the cake batter. Note: To prevent cracking of the sponge cake, roll it as soon as it comes out of the oven.
Ingredients:
Batter Mixture
1 cup All Purpose Flour
1 1/2 tsp Baking Powder
1/2 tsp Salt
1/3 cup Fresh Milk
1 tsp Vanilla
4 Egg Yolks
1/4 cup Vegetable / Canola Oil
1/3 cup Sugar
1 tsp Ube Flavour
1 tsp Purple Food Colouring
Meringue Mixture
4 Egg Whites (Apology to the spelling in the video)
1/2 tsp Cream of Tartar
1/3 cup Sugar
Yema Ube Frosting
4 Egg Yolks
1 cup Double Cream
1 cup Condensed Milk
1 tbsp Butter
1 tsp Vanilla
1 tsp Ube Flavour
1 tsp Purple Food Colouring
1/4 cup Ube Halaya
Toppings
1/4 cup Mature Cheddar Cheese
1/2 cup Double Cream
1-2 tsp Icing Sugar
