I met Chef @prateeksadhu for the first time in 2016. My brother, also a chef, had begun working in a new experimental restaurant called Masque, and we were invited for a tasting menu.

I was sceptical - Mumbai has never been big on tasting menus, and I had had maybe one or two in my 30 years living there.

But what followed was a complete reset of my expectations of what an 'Indian restaurant' could be: Each course was local, foraged, well-balanced, and full of deep feeling.

In the interview Chef Prateek says 'our job as chefs is to create memories through unforgettable experiences' and that's just what he did for me all those years ago.

Today Chef has left Masque but his legacy lives on. Perhaps one of the most passionate and authentic people I have had the chance to interview, with a completely different take on what it means to be sustainable.
