What you need for one serving (600ml):
2 eggs (yup, just two)
*For the yolk mix:*
15g sugar (basically a tablespoon)
A teeny pinch of salt
130ml milk (around 1 tbsp + 1/2 cup)
10g all-purpose flour (again, about a tablespoon)
10g butter (you guessed it, another tablespoon)
1 tsp vanilla extract (for that nice kick)
*For the egg whites:*
A few drops of lemon juice (magic trick for stability)
15g sugar (aka 1 tbsp)
Pro tips:
Lemon juice helps keep the whites from going crazy.
Bake at 200°C (or 390°F for our non-metric friends) for about 15 minutes.
Preheat the oven—don’t skip this! It matters.
Ovens have minds of their own, so check to make sure things look good before pulling them out.
Stick a sugared bowl in the fridge while you whip up the mix (you’ll thank me later).
