Wonderful gluten free crusty bread, which golden crisp crusts and pillowy soft bread inside.
Ingredients:
1 1/3 cup-330 ml warm water
15 g (3 tbsp) psyllium husk
1 tsp sugar - 5 g
8 g (1 tbsp) baker's yeast
15 ml (1 tbsp) oil
15 ml (1 tbsp) vinegar
1/2 cup 80 g brown rice flour
1 cup 145 g buckwheat flour
1/2 cup- 60 g potato starch
5 g (1 tsp) salt
Preparation:
1. In a bowl, add lukewarm water, yeast, and sugar, and mix. Let stand for about 7 minutes, or until a thick layer of foam forms on the surface. If no foam forms, your yeast is dead and you will need a new sachet. Add the psyllium, mix, and let stand for 1-2 minutes to achieve a gelatinous consistency.
2. Add the oil and vinegar and mix well.
3. Add the buckwheat flour, potato starch, whole-grain rice flour, and salt to the bowl and mix well. Knead for 3 minutes.
4. Resist the temptation to add more flour, as the dough should be sticky.
5. Place the dough in a lightly oiled bowl. Let rise for about 1 hour.
6. . Line a baking sheet with parchment paper and place the loave on it. Cover with a clean cloth and let rise for about 20 minutes.
7. Preheat the oven to 220°C.
8. Bake for 30-40 minutes.
9. Let the bread rest for 1 hour before cutting.
