This is one of my favorite, easy vegetarian entrées: cooked black lentils tossed with slightly caramelized onions, reduced vinegar, and spinach. The original recipe calls for serving it with labneh, which I love, but which can be hard to find. A simple yogurt sauce made with Greek yogurt, salt, and fresh lemon works well.
