BLUEBERRY BARS Recipe (Vegan & Gluten-Free)
INGREDIENTS CRUST
170g almond flour
150g quick rolled oats gluten-free
2g baking soda
Pinch of salt
110g melted coconut oil
70g maple syrup
3g vanilla extract
INGREDIENTS FILLING
350g fresh or frozen blueberries
50g maple syrup
15g corn starch
METHOD
Preheat oven to 350F and line 9X9 pan with parchment paper.
To make the crust – mix all dry ingredients and add all wet. Stir to combine. Transfer 2/3 of the mixture into a pan and press firmly to even it. Place the remaining mixture into the fridge and prepare the filling.
To make the filling- soften blueberries in the pan over medium heat, add maple syrup and starch, and cook for 5 minutes to thicken. You can smash blueberries gently.
Assemble the bars as shown in the video and bake for 30 minutes or until golden brown. Take out and let them cool for 10 minutes before transferring onto a wire rack. Cut when they are completely cool.
